The Little Legers Homemade Spinach Basil Pesto

I REALLY REALLY wish that I had pictures of Grace, Jack and Eve to post tonight but now I am having problems loading the past two weeks of pictures from my camera card onto our computer. I'll get Bob to help me out with this one! Until then I'll leave you with a picture of the pesto that we enjoyed making together several weeks ago. Grace and Jack have always loved pesto so this year we decided to grow our own basil so we could make our own pesto all summer long. Grace wrote the word pesto on all of the jars. We will be freezing lots of our pesto so we can enjoy it all winter long too! Here is our pesto recipe:

2 cups of fresh organic spinach leaves
2 cups of fresh basil leaves
2 cloves of garlic
Approximately 2/3 cup of extra virgin olive oil
2/3 cup of pine nuts
1 1/3 cup of grated parmesan cheese

Blend together in a food processor and enjoy!
